What is gelato?
Gelato is the Italian word for icecream and is distinctly Italian-style. Generally speaking, it has a higher proportion of milk than icecream, and a lower proportion of cream and eggs - and therefore it includes less fat. The fruit flavours generally substitute water for milk (so are dairy-free).
Gelato is denser than icecream (that is, it has less air), as it is churned more slowly. It has a softer, silkier texture and is usually served at a slightly higher temperature than icecream is (don't worry - it's still cold - but it will melt a bit quicker!) .
Because of its lower fat content, the flavour of a gelato is far stronger than the flavour of an equivalent icecream
